Ingredients and spices that need to be Prepare to make Tawa Baingan Masala:
- 250 gm Green Brinjals
- 250 gm Purple Brinjals
- 1 tsp Ginger garlic paste
- 2-3 Onions finely chopped
- 1 tbsp Kasuri Methi
- 2-3 tbsp Oil
- 1/2 tsp Turmeric powder
- 1 tsp Salt
- 2 tsp Red Chilli powder
- 2-3 Green Chillies chopped
- 1 small bunch chopped Coriander Leaves
- 1 tsp Dry Mango powder or Amchur
Steps to make to make Tawa Baingan Masala
- Wash and cut the eggplants lengthwise into thin strips. Immerse them in some salt water to retain their colour.
- The Salt water will prevent them from losing their colour. In a pan, heat Oil and saute the Onions until translucent. Add the Ginger garlic paste and the Green Chillies now. Saute all of it for a minute or so. Then add the rest of the spices followed by the Eggplant strips.
- Cover and simmer on a low heat for 15 to 20 minutes. Add little water before closing the lid as required.
- Add Kasuri Methi and cover with a lid. After about 15-20 minutes of simmering on a low heat, it's almost done. See to it that they are nicely done and Oil starts separating from the sides.
- Garnish with lots of chopped Coriander Leaves and saute it for a minute or two before taking it off the heat.
