Ingredients and spices that need to be Get to make Punjabi Rajma Masala:
- 150 g Rajma/Red kidney Bean
- 2 tomato
- 2 onion
- 1 inch ginger
- 6-7 garlic
- 1 handful coriander leaves
- 3 tbsp mustard oil
- 1 tbsp ghee
- 1 tsp Cummin seeds
- 1/8 tsp asafoetida
- 1 bay leave
- 1 green cardamom
- 1 black cardamom
- 1 inch cinnamon stick
- 2-3 cloves
- 2 green chilli or as per taste
- 1 tsp turmeric powder
- 1 &1/2tsp chola masala
- 1/2 tsp garam masala
- 1/2 tsp dry mango powder
- 1 tsp kasmiri mirch powder
- 1 1/2tsp salt or as per taste
Steps to make to make Punjabi Rajma Masala
- Wash and Soak rajma for 6-8 hours or overnight. Further, drain extra water wash it again.
- Now In a pressure cooker add rajma, 1/2tsp salt, 1/2tsp turmeric powder, black and green cardamom, cinnamon stick, cloves abd 1cup water. Cook until 3 whistles. Let the cooker release its pressure. Seave the rajma and save this flavourful water for later.
- In a grinding jar add 1/2onion, ginger, garlic, 1 chilli and coriander leaves grind till smooth. Transfer in a bowl and keep it ready. In same jar add chopped tomatoes and blend till smooth. Keep it ready.
- Further, Heat oil in a kadhai, splattered Cummin seeds, chilli and bay leave. Add 1& 1/2 chopped onion. Cook until onion becomes translucent.
- Further, add onion - garlic paste, stir and cook for 4-5 minutes. Keep the flame on low-medium. Now add chola masala, 1/2tsp turmeric powder, garam masala, dry mango powder, kasmiri mirch powder and 1tsp salt combine everything together and cook for a minute. Further, add tomato paste mix all together.
- Cook masala for 7-8 minutes or till it released oil. Now add boiled rajma. Mix and cook for 6-7 minutes.
- Further, add flavorful water of rajma that we keep earlier. Mix, cover and cook till start boiling. Add 1tbsp ghee, chopped coriander leaves and adjust the salt. Cook for another 1-2 minutes. Turn off flame. Punjabi Rajma Masala is ready.
- Serve hot with steam rice, a slice if lemon and onion. Enjoy
