- 200 gms Besan

- 2 Tsp Ginger Garlic paste
- 1 dollop of Stuffed Red Chilli or mango pickle masala
- 1/2 Tsp Turmeric powder
- 1/2 Tsp Kashmiri LAL Mirch powder
- 1/2 Tsp Cummin powder
- 1/2 Tsp Coriander powder
- 1/2 Tsp Aamchur powder
- as needed Water
- For Frying
- as needed Veg oil
Instructions to make to make Patra
- Recipe for 10 leaves we are going to use 5 for one roll if the leaves are thick you can use 4 only.
- You don't require much water, the batter will be like the dal batter we make while making Pokoda out of grinded dal, spread it on the leaves with your fingers (on the rough surface side), if the stalk is too thick at the back on the rough side try to slice it out by laying the knife flat, be careful don't tear the leaves, after you finish spreading on one, keep one more on top upside down with the leaves pointed in other direction.
- Once all is done fold the edges a little (as seen in pic) from three sides and roll the leaves tightly and keep it in a steamer (here I used the momo steamer which has perforation) and steam for 20 minutes.
- Once done let it cool, slice it and have it or you can shallow fry, flipping the sides till the sides have browned but not burnt, While frying you can temper it with white Sesame seeds also. Serve it hot with any chutney you love...I made chutney with mint, Coriander, garlic, green chilies, lemon, and salt.
