  2. 1 Chopped onion
  3. 1 Chopped tomato
  4. 2 Chopped green chillies

  6. 1tbsp Oil
  7. 1.5 tsp Mustard seeds
  8. 1 tsp Jeera
  9. 1/4 tsp Hing
  10. 1 tsp Turmeric powder
  11. 1.5 tsp Chilli powder
  12. 1 tsp Coriander powder
  13. 1 tsp Cumin powder
  14. 1/2 tsp Garam masala
  15. 1 tsp Saunf powder
  16. 1 tsp Aamchur or dry Mango powder
  17. as per taste Salt
  18. 1 tsp Sugar

Steps to make to make Maharashtrian Style Bhindi. (Bhendichi Bhaji)

  1. First, heat 1/2 tablespoons oil. Add 1/2 of mustard seeds, cumin seeds, curry leaves, hing and stir fry well. Add
  2. Then add the chopped onion, fry well. Add tomatoes, chilles and keep cooking till aromatic and soft. Add some water, cover and cook the tomatoes.
  3. Now make a paste of all the spice powders with water and add to the mixture. Add water more if you like a flowy gravy. Add salt to taste and switch off flame after 2 minutes.
  4. Transfer the cooked gravy into another bowl. Heat remaining oil in the pan. Add rest of mustard, cumin, hing, curry leaves and saute' well.
  5. Add bhindi and stir fry it well. When it is half cooked, add the cooked paste and mix well. The sourness of tomatoes will stop the sticky threads from forming.
  6. Now cook for 5 to 8 minutes and then switch off the gas. garnish with coriander leaves and serve with hot fulkas. Enjoy tasty and delicious Bhendichi Bhaji and Poli, the simplest and tastiest Maharashtrian meal.
