  2. 2 cups normal flour (maida)
  3. as needed melted ghee
  4. to taste salt
  5. 1 tsp Carom seeds
  6. For stuffing
  7. 1 tbsp Coriander seeds
  8. 5-6 Black pepper
  9. 1 tsp Saunf/fennel seeds
  10. tsp Cumin seeds
  11. 1/4 tsp Hing/asafoetida
  12. 1 tsp Grated ginger
  13. 2 Chopped green chillies
  14. 2 tbsp Besan/gram flour
  15. 2 tbsp Oil
  16. 4-5 Chopped onion
  17. to t Salt
  18. 1/2 tsp Kashmiri lal mirch powder
  19. 1/2 tsp Turmeric powder
  20. 1/2 tsp Garam masala
  21. 2 Boiled potatoes
  22. 2 tsp Chopped coriander leaves
  23. 1/2 tsp Amchur (dry mango)powder
  24. 1 tsp Sugar

Steps to make to make Pyaz kachori

  1. Make the fine dough with 2 cup maida also add 1/4 cup ghee, ajwain, salt and water as need, after that cover with a moist cloth and keep aside for 15 minutes
  2. In a mixer, cumin, coriander seeds, black pepper, and saunf grind coarsely.
  3. In a pan, take 2tbsp oil for heating, add grind spises and have flame on low, shake it nicely, add hing, grated ginger and chopped green chilli, fry it on low flame after 1 minute add besan 2 tbsp and saute for 30 seconds
  4. After that add chopped onion, saute onion until it changes colour slightly, add salt as per taste, keeping the flame on low medium, add kashmiri lal mirch, turmeric powder mix well, add mashed boil potato and roast well, saute on low flame till it turns aromatic finally add garam masala, chopped coriander leaf, amchur and sugar mix well, onion stuffing is ready, allow to cool completely.
  5. Make small filling balls, from stuffing mixer
  6. Pinch small lemon sized ball from dough
  7. Take a dough ball and flatten it, take a prepared stuffing ball and place in the centre, get the edges together and from a bundle, close the top by pressing and flattening, gently press the edges and flatten to form a kachori size,
  8. Take a pan, Fry when the oil is medium hot, in first step.. fry all kachori for 10 seconds and remove it.
  9. In second step add oil to lower the temperature and fry all kachori slowly slowly on low flame, your pyaz kachori is ready, serve it with tomato sauce and green chutney
