- 1/2 tsp salt

- 3-4 potatoes boiled and mashed

- 1 tsp cumin seeds
- 1/4 tsp asafeotida
- 1 tsp crushed coriander seeds
- 3-4 green chillies finely chopped
- 1 inch ginger finely chopped
- 1/4 tsp turmeric powder
- 1 tsp coriander powder
- 1 tsp red chilli powder
- 1/2 tsp garam masala powder
- 1/2 tsp black salt
- 1 tsp amchur ( dry mango)powder
- to taste Salt
- as needed Oil for frying
Steps to make to make Potato Samosa
- In a mixing bowl add flour,carom seeds and salt. mix well the add ghee mix all. Well to make a crumbly texture. Gradually add water and make a hard dough. cover and keep aside for 15-20 minutes
- Take a pan add 1 tbsp oil heat it add asafeotida,cumin seeds, green chillies and ginger saute a minute then add peas and turmeric powder. Mix and cook for a minute.
- Now add boiled and mashed potatoes and all the above spices. Mix all together cook for 2-3 minutes. Turn off the flame let cool down the mixture.
- Take the dough make small balls. take one ball roll it like roti.with a sharp knife cut into middle take one part apply water on lower edge then fold it like a cone.
- Take the potato filling out one tbsp filling in the cone. apply water on the edges and seal it with the help of fingers. prepare all samosa likewise.
- Heat oil in a kadhai on medium flame add some samosa in hot oil fry it on low to medium flame until they turns golden brown. Fry all samosa in batches. Serve with chutney and enjoy.
