Ingredients and spices that need to be Make ready to make Homemade Chole Kulche:
- 400 gm Dry Chickpeas
- 1 tsp Salt or to taste
- 1/4 tsp Turmeric powder
- 1 tbsp Red chilli powder
- 1 tbsp Dry Mango powder or Amchur homemade
- 1 tsp Garam Masala
- 1 tsp Cumin powder roasted
- 2 Onions finely chopped
- 2-3 Tomatoes finely chopped
- 1 tbsp Lemon juice
- 1 small bunch Coriander Leaves finely chopped
- 2-3 Green Chillies chopped
- 3 tbsp Oil
- FOR THE TAWA KULCHE-
- 3 cups All-purpose Flour or Maida
- 1/2 tsp Baking powder
- 1/4 tsp Baking Soda
- 1/2 cup Curd
- 1 tsp Salt
- 1/2 tsp Sugar
- as required Sesame Seeds
- As needed Black Seeds or Kalonji
- 1/4 cup melted Butter
Instructions to make to make Homemade Chole Kulche
- Add Flour and all the ingredients as mentioned under making of Kulche. Make a smooth dough using water as required. Cover and keep aside for about 30 minutes.
- Soak the Dry Chickpeas or Chole overnight for best results. Pressure cook them using a little bit of Salt and Turmeric powder. To a pan, add Oil. Saute Onions until light brown with some shredded Ginger. Now add Tomatoes, Green Chillies, all the spices as mentioned and cook until soft and done.
- Garnish with chopped Coriander Leaves and sprinkle some Lemon juice as desired. Adjust Salt according to taste.
- For the making of Kulche, first of all, divide the dough into equal sized balls. Roll it a bit thicker. Apply some water on the top side and sprinkle both Sesame and Black Seeds. Also sprinkle some finely chopped Coriander Leaves also. Press lightly with the hands or the rolling pin. Apply some water to the other side too.
- Place them on the mildly heated Tawa with the plain side down. Cover and cook until it puffs up and browned. Flip it over and cook until it's fully done. It takes about 2-3 minutes for each Kulcha to get done. Keep the heat on a low only.
- Spread some melted Butter on each one of it and serve hot with Chole to your loved ones. Enjoy!
