- 50 Sooji puris (homemade or store bought)
- 1 bunch Pudina/ mint
- 1 bunch Coriander leaves
- 4-5 Green chillies
- 1 cup Boiled black chana or sprouted moong or chickpeas
- 1/2 :cup Tamarind pulp
- 2 cup Jaggery
- 3 Boiled potatoes medium
- 6 cups Cold Water
- As per taste: black salt, chilli powder, mango powder
- As per taste cumin powder, fennel powder,
- As per taste: ginger powder, coriander powder, Black pepper,
- 2 tablespoons Chopped coriander
- 2 tablespoons Lemon juice
- 1 tsp Cooking oil
- to taste Salt
- as required Khara Boondi for garnish
Steps to make to make Pani Puri Chaat
- Wash the green leaves and roughly chop them. Chop the chillies. In a blender jar, add all, along with oil, lemon juice, a little water and blend to a paste.
- Add cold water as per desired consistency and blend again. Strain the mixture in a bowl. Add all the spices as per taste. Stir well. Now the green spicy pudina water is ready.Keep in fridge.
- To make sweet tamarind water, mix jaggery, tamarind pulp and add 2 cups cold water. Mix well till Jaggery is dissolved. Strain the mixture. Add the above-mentioned spices as per along with cold water as per taste. Keep in fridge.
- To make potato and chana filling for puris, mash the boiled and peeled potatoes well with a masher. Add boiled chana/ sprouted moong and chopped coriander leaves and mix well. Add spices as per taste. Make them into small balls for easy stuffing.
- Assemble the green water, garnish with khara Boondi, tamarind water and potato filling in serving bowls. Keep puris in a basket. To serve, break puri in center, add some potato balls stuffing, pour spoonfuls of both the prepared waters and serve the yummylicious Paani Puri chaat!
