- 2 tablespoons toasted coconut, 2 teaspoons sunflower seeds, Extra fresh Coriander & Chilli flakes
Steps to make to make Coconut and Aubergine Dahl 🌱
- Firstly start by prepping your lentils by washing and boiling to the instructions, drain and set aside. Place your aubergine on a baking tray with a drizzle of oil, roast at 200deg C for 40 minutes. Once cooled split the skin, shred the flesh with two forks and set aside.

- Now stir in the lentils and aubergine (add a splash of hot water here if needed) and let gently simmer for a further 5-7 minutes.
- Remove from the heat, stir in the cream (or plant based alternative) and chopped coriander. *Top with extra coriander, toasted coconut and sunflower seeds.
- Serve straight from the pan at the table with some flatbreads, mango chutney and a sprinkle of chilli flakes if you need a hit of spice.
