- 2 cup all-purpose flour
- 4 tbsp ghee (clarified butter)
- 1/2 cup water
- 1/2 tsp salt or as per taste
- Filling of kachori
- 1/2 cup moong dal Split (yellow lentils)
- 2 tbsp oil
- 1 pinch asafoetida
- 5 tbsp besan (gram flour)
- 1 tsp cumin seeds
- 1 tsp fennel seeds
- 1 tbsp crushed coriander seeds
- 1 tbsp grated ginger
- 3-4 green chillies (chopped)
- 1 tsp garam masala
- 1 tsp salt
- 1 tsp red chilli powder
- 1 tsp aamchoor powder (dry mango powder)
Steps to make to make Khasta Moong dal kachori
- First of all wash moong dal and soak it for 2 hours and then grind coarsely.
- For moong dal filling Heat oil in a pan on low medium, add cumin seeds,chrushed coriander seeds and fennel seeds sauté for a minute,now add in chopped green chillies and grated ginger sauté it for a minute later add dry powdered spices (red chilli,garam masala) and salt mix everything nicely.
- Now add Besan to the masala and sauté for about 5 minutes nice aroma of Besan will come then add coarsely grounded moong dal mix well sand sauté 6- 8 minutes till all the moisture from masala evaporate, then add dry mango powder mix well. Filling of kachori is ready
- Now we will knead the dough for kachori. In a mixing bowl take all-purpose flour (maida),salt and ghee,mix well and then by adding water gradually make a semi soft dough,keep it to rest for at least 20 minutes.
- Now make 11- 12 small balls from dough,roll one ball with the help of rolling pin then apply water on upper surface of water then add moong dal filling,close it again tightly then roll it in kachori shape. Do same with the other balls.
- In a pan add oil for frying on low medium heat,add 4 to 5 kachoris at a time or as per space required, fry till light golden brown from both side,it will take at least 20 minutes.
