Steps to make to make Dhaba Style Mixed Vegetable

  1. Wash vegetables properly, peel off their skin & then chop them in medium-small size pieces.
  2. Now again wash them properly.
  3. Grind Tomatoes finely into purée in a mixer grinder.
  4. Chop 1 Green Chilli & Onions very finely.
  5. Chop other 2 Green Chillies & 1 inch Ginger in slices.
  6. Now take a kadhai, add 1.5 Big Spoon Mustard Oil in it & keep the gas on high flame to burn the oil first.
  7. When smoke starts coming out of Kadhai, turn off the flame & let the oil cool down a bit.
  8. Now take another pan, add 1/2 Big Spoon Mustard Oil in it from the same kadhai & keep the gas on medium flame.
  9. Now add all chopped vegetables in it & roast them till they become translucent/ soft.
  10. Meanwhile, on the other hand, turn on the gas & keep it on medium flame.
  11. Then add, 1 Teaspoon Jeera, 1/2 Teaspoon Ajwain & 1 Pinch Hing in it & let them sizzle.
  12. When they start sizzling, add finely chopped onions & green chillies in it & roast them till they turn into golden brown in colour.
  13. After 4-5 minutes, when they turn into golden brown in colour, add 1/2 Teaspoon Haldi Powder, 1/2 Teaspoon Amchoor Powder, 1/2 Teaspoon Laal Mirch Powder, 1 Teaspoon Kashmiri Laal Mirch Powder, 3 Teaspoon Dhaniya Powder in it & mix them properly.
  14. Now roast them for 3-4 minutes.
  15. Now on the other hand, when vegetables turns translucent/ soft, turn off the flame & take them out in a bowl.
  16. Then after 3-4 minutes, add finely grinded tomato purée in it with 1 Teaspoon Salt so that they start releasing oil quickly.
  17. After 6-7 minutes, when oil is completely released, add 1 Cup Matar in it & cook them for 1-2 minutes till they become soft.
  18. After 1-2 minutes, add roasted vegetables in it & mix them properly.
  19. Then add some water, 1 Teaspoon Roasted Kasuri Methi, 1 Teaspoon Garam Masala, Sliced Ginger & Green Chillies in it & mix them properly.
  20. Cook them for 4-5 minutes.
  21. Your Dhaba Style Mixed Vegetable is ready to be served.
