Ingredients and spices that need to be Take to make Khichuri:

  1. 1 bowl basmoti rice
  2. 1/2 cup mustard oil
  3. to taste Salt
  4. 1 bowl dhuli moong dal
  5. 1 teaspoon haldi powder
  6. 1 teaspoon red chilli powder
  7. 1 1/2 tablespoons homemade garam masala powder
  8. 4 chopped tomatoes
  9. 2 bay leaves
  10. 1/2 teaspoon hing powder
  11. 1 piece crushed ginger
  12. 1 small bowl of chopped peeled potatoes, carrots , pumpkin , beans
  13. 6 slitted green chillies
  14. 1 tablespoon tomato sauce
  15. 1 teaspoon mango powder
  16. 1 teaspoon rose water
  17. Tadka
  18. 2 tablespoons ghee
  19. 4 dry red chillies
  20. 1 teaspoon jeera
  21. as needed few cardamoms, cloves, cinnamon stick
  22. 1/2 cup curry leaves

Steps to make to make Khichuri

  1. Heat the kadhai,add dhuli moong dal saute in medium high heat and saute till the dal is crisp and light weight and red in color,mind it it should not be burned,now wash it with water,and keep aside, another side wash the basmoti rice with water and soaked the rice in water for thirty minutes. After that strain the water and spread the rice in plate.
  2. Now heat the mustard oil in the kadhai fry the bay leaves, ginger and hing for a minute,add chopped potatoes and saute for two minutes, add little salt, Add chopped carrots and chopped beans saute for another two minutes, Add chopped pumpkin and cook another minute Last of all add raisins and cook for few seconds in low flame and keep the sautéed veggies in the plate.
  3. Add two bay leaves, crushed ginger, and hing and saute for few seconds. Add chopped tomatoes and saute for two minutes add haldi powder and red chilli powder combine all well and low the flame.
  4. Add the soaked rice and dal to the same kadhai and mix everything evenly, and saute for three to four minutes in low flame, add fried veggies including raisins and cook two minutes more,add homemade garam masala powder,mango powder and combine evenly.
  5. Now add warm water as needed it may be more,for making gravy is perfect. And cook to continue,in medium high heat. Add salt taste. Saute it.add rose water and cook till the khichdi is ready.
  6. Now take a tadka pan boil ghee in low flame. Add jeera, cardamoms, cloves and cinnamon stick, dry red chillies, curry leaves, off the burner and put the tadka in the khichuri and saute it
  7. Healthy khichuri is ready to serve.
