- To make Chena..First bring milk to a boil in a saucepan. Then add lime juice or vinegar. Keep on stirring and you will see the milk getting curdled.When you see the greenish whey, pour the curdled milk in to pan lined with a muslin cloth. Once you are done adding all the curdled milk, then bring together the edges of the cloth and gently squeeze out the remaining whey from it.
- Now take cheena in big thali and mash it with the help of palm. Mash till it forms like a dough. Make equal parts of dough and make balls.
- Meanwhile let's prepare Pani puri Pani. Take all the ingredients of Pani puri Pani and grind it in wet grinder to make smooth paste.
- Add water and sugar. Mix well for syrup. Boil well. Now add cheena balls into it and cover the lid. Cook for 15 to 20 mins.
- Now strain the masalas. In one big bowl add water and paste of Pani puri Pani. Mix well. Adjust the salt according to your taste. Refrigerate it.
- By now Rasgullas aur fine. Switch off the flame and let it cool down. Once it cools down add to Pani puri Pani. Refrigerate for 2 to 3 hours so that Rasgullas soak Pani puri Pani completely.
