- 1 Tomato sliced / chopped
- 1/2 Tsp Ginger Powder (or paste)
- 1/2 Tsp Garlic Powder (or Paste)
- 1/2 Tsp Grounded Cummin
- 1/2 Tsp Grounded Coriander
- 1 Tsp Kashmiri Chilli powder
- 2-3 Fresh Chilli slitted
- 1/2 Tsp Amchoor powder / Dry raw mango powder
- 2-3 tbsps Mustard oil
Steps to make to make Karele ki Sabji (Bittergourd)
- I don't peel the Bittergourd in any of Bittergourd dish/ preperation. Cut the Bittergourd from the centre vertically and take out if any hard matured seeds are there, dont throw away, sun dry it and make powdered chutney with other seeds and ingredients. (See the recipe here.)
- After discarding the seeds if any cut the Bittergourd into thin slices. Sprinkle little salt and turmeric and let it macerate for half an hour. Discard the water released from it.
- Heat mustard oil in a kadai, add whole Dry chilli and Kalonji or Panch Phoron, once it splutters, add onion and saute it for few minutes. Then add the Bittergourd and stir & mix and cook for about 5 minutes or so. Then add tomato, fresh chilli, ginger garlic powder or paste, salt as per taste and cook for about 10 minutes till Tomato becomes soft. Then add the spices, if you want to add more turmeric add it. Cook till the Bittergourd gets well cooked. Add the aamchoor and mix well.
