Ingredients and spices that need to be Make ready to make Amritsari Chole:
- 1 cup dry Chickpeas
- 1 tbsp tea leaves or 2 tea bag
- 1 tsp salt or to taste
- 3 tbsp mustard oil
- 1/2 tsp Cummin seeds
- 3 bay leaves
- 1/8 tsp asafoetida
- 3-4 chilli
- 1 cup chopped onion (red onion goes well in this recipe)
- 6-7 garlic
- 1 inch ginger
- 1 brown cardamom (badi elaichi)
- 2 green cardamom
- 1 inch cinnamon stick
- 2 cloves
- 7-8 black pepper
- 1/2 tsp turmeric powder
- 1 tsp coriander powder
- 1 tbsp chola masala
- 1 tbsp anardana powder
- 1 tsp dry mango powder (amchur)
- 1 tsp kasuri meathi
- 2 green chilli slit
- 7-8 ginger slit
- 2 tbsp chopped coriander leaves
Instructions to make to make Amritsari Chole
- Soak Chickpeas for 6-8 hours or overnight.
- Boil tea leaves with a glass of water. Seave the tea water.
- In a pressure cooker add soaked chickpeas, tea water, 2 bay leaves and 1/2tsp salt. Cover and cook until 6-7 whistles or until the chicken becomes soft. * Strain the chole/chickpeas and reserve the stock for later.
- Meanwhile, in a grinding jar add remaining onion, ginger, garlic, green cardamom, black cardamom, pepper, chilli and cinnamon stick. Grind till smooth paste. Keep it ready.
- Further, heat oil in a kadhai, splattered Cummin, chilli, asafoetida and bay leave. Now add 3/4cup chopped onions and cook till they become golden brown.
- Add in prepared paste, stir and cook for 2-3 minutes. Now add all the dry masala/spice powders and salt. Stir the spice powders and saute for a minute.
- Now add the chole and saute for 5-6 minutes. Add slit green chilies and fry for a minute. Yes the chole is spicy. Further, add the strained stock to the chole.
- Keep the flame on medium and simmer till the gravy thickens a bit. You don’t want a watery chole. Add chopped coriander leaves and julienned ginger. Adjust the spices and seasonings as per your taste preferences.
- Serve hot with Puri, onion and lime wedges by the side.
