  1. For Boiling Dal
  2. 250 grams Mix Dal
  3. 750 ml Water to boil
  4. 1 pinch Salt
  5. For Kebabs
  6. 5 cups Gram Flour (Besan/Chickpea Flour)
  7. 3 tbsp Ginger Garlic Chilli Paste
  8. 2 Onions, medium
  9. 7 Spring Onions, medium
  10. 2 tbsp Red Chilli Powder
  11. 2 tbsp Turmeric Powder
  12. 1 1/2 tbsp Dry Mango Powder
  13. 1 tbsp Cumin Powder
  14. 1 tbsp Coriander Powder
  15. 1 pinch salt
  16. 1/4 cup Fenugreek Leaves
  17. For Tempering
  18. 2tbsp Oil
  19. 1 tbsp Black Gram Dal
  20. 1 tbsp White Sesame Seeds
  21. 1 tbsp Mustard Seeds
  22. 1 tbsp Cumin Seeds
  23. 2 Green Chillies, chopped
  24. 10-12 Curry Leaves

Instructions to make to make Mix Dal Kebab

  1. In a pan add mix daal(any of choice), rinse once in running water, and add water and salt, soak for 30mins. Keep it to boil on medium flame until 80-90% cooked. Do not cook completely.
  2. Take a bowl, strain the water and don't throw away the water. We'll need it later. Keep strained dal in a large bowl.
  3. Keep all your ingredients ready, mix all the spices in a bowl and keep the water to summer on low flame to steam the kebabs.
  4. In a large bowl add boiled dal.
  5. Add gram flour(Besan) and mix well.
  6. Add ginger, garlic, chilli paste and mix well.
  7. Add chopped onions and spring onions. Mix well.
  8. Add the spice mix.
  9. Mix everything well.
  10. Add fenugreek leaves.
  11. Add the strained dal water and form a dough. Roll our kebabs.
  12. This is how you keep water to boil, add a large plate and grease with oil so that kebabs don't stick to the place. You can even use idli/dhokla steamer(Any steamer works).
  13. Roll out medium size kebabs. Keep it to steam for 12-15 mins. You can do a skewer test to check if they're cooked or not. Once ready let it cool.
  14. For Tempering, heat oil in a kadhai, add black gram dal, mustard seeds, cumin seeds, and sesame seeds. Saute for 30-40 seconds.
  15. Add green chillies and curry leaves. Add steamed kebabs and let them sit for 1 minute.
  16. Kebabs are ready, sprinkle chat masala, serve hot with your choice of chutneys and sauces.
